Im am re-setting the neck on a violin that is severely pulled toward the
treble side. Which is best? To carve or sand the block, or the neck, to get
it back in alignment, or add a shim.

Depends on the circumstances, but I usually carve the block to tidy the mortise then make a shim... you have 4 dimensions to fit... depth of neck into block (affects string length and heel fit); longitudinal alignment; angling for bridge height; and alignment of the heel plane with button plane .... cheers... Like Matt said, depends on the circumstances. In some cases, you may have to fill the mortise with a block of willow or spruce ( I prefer willow), and recut the mortise to get the correct dimensions and angles.

I always fill the hole after I pull the neck--always. It doesn't take that long, and gives you a fresh start.
