Working on my first fingerboard it occurred to me that this relatively thin piece of wood, sticking out on its own so far below the neck, must move – warp - twist some- in time, especially on older violins.

Does this happen often? And if so, how does it affect the playability?

In general it will not warp or twist, unless the ebony used is not properly seasoned.

And yes, if it happens it will play havoc with playability.

From my limited experience, seems like way too many fingerboards on the vintage German imports have warped fingerboards. I attribute this to the fact that the fingerboards were glued to an uneven surface...the neck surface wasn't properly planed. For example, the drooping fingerboards were glued to a convex neck surface.
